The samples of kulfi marketed in different zones of Agra city and prepared in the laboratory as control samples were analysed for various attributes of sensory and chemical quality. The control samples prepared in the laboratory were superior in sensory quality viz. colour, flavor and bdy and texture and in chemical quality viz. Acidity, Ph, T.s fat, protein, lactose, sucrose and ash, to the market samples of different zones.
