Assessment Of Milk Quality For Cleanliness

Abstract

Clean milk production is an important occupation of rural farmers in India. Adoption of scientific clean milk production practices has great potential to improve the quality of milk. The present study was conducted in Hisar district of Haryana state. 30 samples were collected from farm level and 10 samples were collected from consumer level. Study indicated that all samples both farm and consumer level found normal in organoleptic test and pH of the milk. It might be due to a fresh collection of milk within 2-3 hours of milking. Standard plate counts of farm level milk samples found 2-45×102 cfu/ml and 10-60 ×102 cfu/ml at consumer level. About half of the total (46.67%) farm level and all consumer level milk samples had coliform counts. All consumer level milk samples had high coliform counts; it might be due to use of contaminated water for washing of utensils used for transportation of milk by milk-men. The presence of coliform organisms in milk indicates unsanitary conditions of production, processing, or storage. In the present study, somatic cell counts were normal count below 5×105 cells/ml and all milk samples collected from farm and consumer level were found very well in standard plate count, having below 2 lakhs counts/ml. The somatic cell count (SCC), which comprises neutrophils, macrophages, lymphocytes, erythrocytes and epithelial cells, is a helpful indicator of intra-mammary infection. The largest rise in SCC during inflammation (mastitis) is due to the influx of neutrophils into the milk to fight infection, which has been estimated at over 90% and somatic cells in milk is measured as a somatic cell count. Milk somatic cell composition varies depending on the kind of secretion or lactation cycle.
